Bacon and Blue Cheese Omelet with Spinach, Onions and Mushrooms

This is one of my new favorite weekend breakfasts!  You can enjoy full fat cheese like blue cheese because the intensity of the flavor lends itself to a smaller serving needed.  I find that with a shredded cheddar, for example, I need a lot more cheese to get the flavors right.


Ingredients:

3 egg whites, 1 egg, beaten
3 slices center cut bacon
2 tbsp blue cheese crumbles
1/2 c fresh baby spinach
1/4 c sliced mushrooms
1/4 c sliced  yellow onion

First, cook the bacon, set aside. In the same pan, saute the onions and mushrooms, set aside.

Now, pour your egg mixture into the same pan, allow to cook, stirring when needed to evenly cook (I don't always do this because I love a runny egg).  Layer the spinach, bacon, cheese and other veggies onto one side of the egg mixture. Fold the other side over to make the omelet. Cook 1 minute, flip and cook until done.

I serve topped with Cholula hot sauce because....well, I love Cholula. 



Whole Wheat Breakfast Bean Burrito

Ingredients:

1 La Tortilla Factory whole wheat tortilla (large)
1/2 c fat free refried beans
1/4 c shredded 2% mexican cheese
sliced fresh jalapenos to your liking

Very simple...spray a pan with a bit of olive oil spray (pan heated at medium) and put your tortilla down. This will brown and crisp up the tortilla (I find that the LTF tortillas have a weird texture if I don't do this step).  With a spoon, smooth the beans into the center of the tortilla. Top with sliced jalapenos and cheese. Fold the two sides over the center, and continue to heat in the pan for about a minute, and then flip and heat it thru. 

Top with salsa and enjoy!  It's huge!
